Full of protein and vitamin C, this lentil soup is the perfect choice for a healthy and delicious meal.
Lentil Soup with Lemon

Ingredients
- 2 teaspoons butter
- 1 onion
- 1 garlic clove
- 2 carrots
- 250g dried lentils
- 750ml water
- 410g Bonny Full Cream Evaporated Milk (1 can)
- 2 tablespoons lemon juice
- Salt, pepper, rosemary and thyme, to taste
Preparation
Melt butter in a pot. Chop onion, garlic and carrots and sauté for 5 minutes.
Add in lentils and water and bring to a boil. Reduce heat, cover and let simmer for 10-20 minutes according to packet instructions until lentils are soft.
Mix water with Bonny Full Cream Evaporated Milk and stir into pot. Let simmer until slightly thickened.
Add lemon juice and season to taste with salt, pepper, rosemary and thyme.
