This easy-to-prepare mushroom soup will win you over with its thick and creamy texture. What’s more, it is perfect for preparing double the amount and freezing half.
Creamy Mushroom Soup

Ingredients
- 4 tablespoons butter
- 1 onion
- 500g mushrooms
- 500ml chicken broth
- 1 bunch of parsley
- Salt and pepper, to taste
- 2 tablespoons flour
- 2 egg yolks
- 250ml Bonny Full Cream Evaporated Milk
Preparation
Melt 2 tablespoons butter in a pot. Chop onion and mushrooms and add to pot. Steam for 2 minutes.
Deglaze with broth and season with parsley, salt and pepper. Bring to a boil and simmer for 15 minutes.
In the meantime, melt the remaining butter in a saucepan and stir in flour. Whisk egg yolks and Bonny Full Cream Evaporated Milk into the soup. Leave to simmer until soup starts thickening.
Season to taste and serve with parsley sprinkled on top.

You can easily make this soup vegetarian by replacing the chicken broth with vegetable broth.
