Masala powder:
Ingredients: 40 whole cardamom, 1 tbsp cloves, 1 tsp whole black pepper, 2 cinnamon sticks, 1 mk fennel, 1 star seasoning, 1/2 nutmeg, 2 tbsp ginger
Method: Fry the ingredients in the pan until their aroma appears, remove from the pan and leave to cool, then grind in a spice mixer until it becomes a powder.
Grate the nutmeg on the mixture of roasted and pre-ground spices. Add ginger, mix the ingredients and store in a small jar for use at any time.
